Vegetable stew recipe

Here is a simple recipe for vegetable stew, which can be served as a side dish or an independent dish:

Ingredients:

2 medium carrots, cut into circles or half rings
1 large onion, finely chopped
2 medium potatoes, diced
1 red pepper, cut into strips
1 yellow pepper, cut into strips
2 medium zucchini (zucchini), diced
2 tomatoes, diced
3 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1/2 cup vegetable broth (optional)


Instructions:

In a large frying pan, heat the olive oil over medium heat.

Add the chopped onion and fry it until soft and transparent.

Add carrots, potatoes, red and yellow peppers to the pan. Stir the ingredients and cook them for 5-7 minutes until slightly soft.

Add the zucchini, tomatoes and garlic. Continue cooking for another 5 minutes.

Season the vegetables with thyme, rosemary, salt and pepper. If desired, add vegetable broth for extra flavor.

Cover the pan with a lid and reduce the heat. Let the stew simmer for about 15-20 minutes, until the vegetables are completely soft and fragrant.

Try it and, if necessary, adjust the seasonings.

Serve the vegetable stew hot, sprinkled with fresh herbs, such as parsley or basil. It can be served as an independent dish or a side dish to meat or fish.
