Here is a simple recipe for cooking mussels with potatoes and carrots:

Ingredients:

500 g mussels, peeled and washed
3 medium potatoes, peeled and diced
2 medium carrots, peeled and sliced
1 onion, finely chopped
2 garlic cloves, chopped
1/2 cup white wine (optional)
2 tablespoons olive oil
Salt and pepper to taste
Fresh herbs (dill, parsley) for decoration
Lemon slices to serve

Instructions:

Processing of mussels:

Rinse the mussels thoroughly under cold water before cooking.
Make sure that the mussels are closed or close when pressed – these can be used. Discard mussels with open or damaged shells.

Cooking vegetables:

In a deep saucepan, heat the olive oil over medium heat.
Fry the onion and garlic until soft.
Add the sliced potatoes and carrots. Cook the vegetables for 5-7 minutes, stirring occasionally.

Adding mussels:

Add the mussels to the pan. If you are using wine, add it now.
Cover the pan with a lid and cook over medium heat until the mussels open. It usually takes 5-7 minutes.
Discard the unopened mussels.

Supply:

Serve the dish in deep plates, sprinkled with fresh herbs and with a slice of lemon.
Serve the mussels with potatoes and carrots hot.
